Lucy’s Rhubarb Muffins Recipe

Rhubarb Muffins

  • 1 ½ cups flour
  • 3/4 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup chopped rhubarb

Combine flour, baking soda, salt in one dish

Cream sugar, oil, and egg in a blender

Add flour mixture to sugar mixture, alternating with buttermilk

Mix until well blended

Bake at 350 for approximately 20 minutes.

Makes 12 regular size muffins
