About our Beef

We have begun to transition over to a breed of cattle called Lowline. This breed was developed at the Trangie Research Centre in New South Wales, Australia. A herd of Champion Angus cattle, purchased in 1929, that were carefully selected for high quality and small size. The end result was a breed of small, black, polled cattle with pure Angus genetics.

The size of the Lowline and their good nature makes them easy to handle. The cattle are feed efficient they seem to maintain themselves on grass. They have an excellent taste, texture and tenderness; producing a high yielding, high quality, high value beef.

When do I pick up my Beef?
Once we have received your down payment we can give you an approximate date on when your beef will be ready for pick up.  Our beef is processed several times throughout the year (mostly fall & winter). 

How much freezer space will my beef take?
A half side share will require, around 8 cubic feet. A whole beef share will need about 16 cubic feet.

What Do I Get?
Below is based on an average half-side of beef with a live weight between 1,000 -1200 pounds.

  • 14 T-bone steaks (3/4” thick)
  • 14 rib steaks (3/4”)
  • 8 sirloin steaks (3/4”)
  • 8 round steaks (3/4”)
  • 2 sirloin tip roasts (3 lbs.)
  • 6 chuck roasts (4 lbs.)
  • 4 arm roasts (3 lbs.)
  • 2 rump roasts (3 lb.)
  • 8 packages of stew beef (1 lb.)
  • 4 packages of short ribs (1.5 lbs.)
  • 4 packages of soup bones (1.5 lbs.)
  • 80-100 lbs. ground beef

*HW-“Hanging Weight” is the term used to describe the weight of a carcass minus the head, hide and entrails. At this point the usable cuts of meat are still intact. Whole and halves are sold to you based on hanging weight.
